My first Lemon Meringue Pie

I have a confession to make: I have a sweet tooth 😂 🍭

It´s quite a serious addiction, really. I know, sugar is supposed to be sooo bad for you nowadays, but honestly, I couldn’t care less. I simply like it. No, strike that, I love it. Of course, I don´t bath in the stuff (that I prefer to do in maple syrup 😉), but I can´t see the harm of enjoying at least one sugar-induced delicacy a day. Not when you take care and eat healthy food as well which, as it happens, I also like to do.

And apart from chocolate the best way to consume sugar is in form of cakes, cookies, pies… well, you get my meaning 😉

Another serious addiction of mine are cookbooks. I just love leafing through them and imagine how the things might taste that are so artfully depicted there. I often do that when I´m hungry which seems to be a bit cruel but in fact helps me a lot when it comes to try out new recipes.

That´s what happened last weekend: having spent most of the day with doing some much needed spring cleaning, I treated myself with leafing through a new cook book afterwards. There I came across the recipe for a Lemon Meringue Pie, something I´ve never eaten before (Side note: pies are not that common in Germany, we prefer cakes or delicious gateaux like Black Forest cake with lots and lots of cream in it).

After having checked that I did indeed have all the necessary ingredients at hand, I decided to give it a try!

It did not actually look like the thing in the cook book (my creations seldom look like that) but I was nevertheless pleased with the result. Especially since the Meringue peaks didn’t collapse after the pie has left the oven 😉.

Unfortunately I still have to learn how to cut the pie without making a mess of it – it didn’t look at all appealing after having been treated murderously with my knife, and that´s why there´s no picture for you of how it looked inside.

But I´m happy to share with you, that it tasted much better than it looked. 😁

  1. Yum!! I love lemon meringue pie. I never make it (mainly because I have a very bad relationship with pastry-cooking), but will order it off any menu. It was one of the few desserts my mum made and I’m still trying to find a pie as good as hers. Hint, hint (yours looks pretty damn good) …. 🙂 xxxxxx

I have a feeling it will take quite a bit of time to perfect that skill… Luckily this will be a fun trial and error 😉 Hope your road trip to your dad was great and that the cold left you before it! 🙂 xxxxxxx

      1. Hehe. I can make meringue, and could probably manage the lemon filling eventually, but with pastry I think there is no hope. My cold is still hanging in there — lots of lemon and honey drinks still. I wonder if there are any cold-fighting properties in lemon custard … just saying 🙂 xxxxxxxx

      2. Oh, I´m sure lemon custard will do the trick as well 😉 It´s got lemon in it, doesn´t it? Just like lemon cake, lemon jelly… 😀
        The pastry is indeed the most difficult part of a pie – although I do blind-bake it with beans before the filling goes in, it rises up anyway… need to practice it more often!
        Hope your cold will take its leaf soon, take good care of those sinuses!!
        Planning a trip to the Zoo for the week and am totally looking forward to it! Haven´t been there in months and hope for many baby animals 🙂 xxxxxxxxx

        The Zoo was lovely, I saw a cute little sloth bear cub that was safely tucked on mum´s back (no picture though cause they were retreating to their den just as I arrived), flirted with a beautiful white wolf (from that I have pictures!) who kept staring and blinking at me with his lovely amber eyes – and I´m sure it was love and not hunger ´cause they´ve just been fed 😉 and saw a polar bear enjoying a swim in the pool. There´s also a big construction site in the middle of the zoo because Berlin´s getting new Pandas!! Most of the time though I was simply too busy to enjoy the animals to make many pictures… will have to go there again soon to make up for that! 😉 Have a fabulous weekend! xxxxxxx

  2. Oh Sarah … your first lemon meringue pie … this is seminal! And you have a cookery book addiction … snap! My (vast, it must be said) collection was decimated by my daughters 8 years ago when they declared that some had to go. They took 10 huge boxful to the local charity shop. I was bereft but of course I have been slyly recollecting them ever since. Slowly slowly I am achieving my goal. These days, the girls feel quite guilty and I have to same, to my shame, I do not help them feel any better. It was heinous! Eating healthily is surely all about balance and one must balance all that good stuff with the supposed naughtiness of sugar ever day, I believe. Moderation in all things – isnt’ that right 😉 xxxx

    1. Thank you, Osyth!! 🙂 It did feel like a huge step in my baking journey 🙂 It´s exciting to try out new baking recipes and I feel I have a new “country” to discover when it comes to pies! So many lovely possibilities!
      If someone would try to get rid off my cookbooks I would go berserk! 😉 That must have been an awful day for you. But I´m glad to hear that you slowly but surely recollect them all – I´ll keep my fingers crossed that it will go unnoticed by your “helpful” daughters 😉

  3. There is something wrong with eating to much sugar everyday, especially white sugar. But hey, if you’re willing to take the risk, nobody can tell you not too 😉
    It does look delicious! Since I try to follow the 80/20 rule of eating natural pure foods, this one is definitely going to be added to my list of ’20 percentage bad – but – delicious – stuff – I must eat- every now and then’. 😛

      I can assure you that I´m not overdosing on sugar 😉 I´m on quite a well balanced diet and these little sins are just that, little 😉 I don´t think it´s healthy to give too much thought about how much good every little thing you eat or don´t does. I´ve a friend who´s quite obsessed with that and it drives me, crazy (and actually her as well)! Our bodies are quite able to handle the things that nowadays are supposed to be so bad for us. Butter for example is much healthier than was always preached, definitely better than margarine. It´s all about balance and the right measuring I think, just as the old greeks taught us over 2000 years ago 😉 xxx

      1. Well, having studied Nutrition and various different ‘diets’ I agree with you mostly. Our bodies are definitely NOT able to handle all what is fabricated nowadays (think of the increasing obesity for instance). However, being and feeling happy is the most important thing 😉

  4. Yours looks very inviting and really tasty, Sarah! I think they say to put in fridge to cool and solidify the lemon pudding part. I love meringue topping but usually have to add marshmallow fluff (comes in a jar and is yummy on cocoa, in recipes and on top of ice cream!) There are recipes online how to use it to make a “stiffer” meringue, which is tasty on chocolate or coconut pies, too.
    I eat at least two sweets a day, since my doctor was more concerned about cholesterol than sugar. Diabetes is sugar related but cholesterol is more hidden in cookies and cakes using hydrogenated fats. Butter is better for us, it turns out since it is more natural than margarine or Crisco/ white lard.
    I am older than you but will say my Mom is 88 and never misses desserts, so possibly I will make it into my older years yet!! : D

    1. Thank you so much, Robin! 🙂 That´s a great advice for cutting the pie, I´ll try it out next time I make one!
      The marshmallow fluff sounds also good, I´ve seen it several times in the supermarket but never knew whether or not the idea is appealing to me 😉 But when you say it tastes great, especially mixed with meringue topping I will try that as well 🙂
      I think your doctor is totally right about that and that people are too much concerned about sugar than cholesterol. I always use butter for bread or for baking cakes etc and a very good olive oil for cooking. And as you say, butter is much better than margarine! (Tastes better too 😉 ) And if you use it carefully it is a perfect energy supplier, just like sugar. When people work long and hard they need to sustain their bodies with more than just a nice little salad 😉 I prefer a balanced diet: from everything a bit, and never too much from one thing – so far it worked well for me 😉 I think we both can handle our sweets 😉 Your mom is living proof for that 😀

  5. I love sugar too! And like you, I make no apologies for it. We all have our little vices, and it makes life so much more enjoyable. The lemon meringue pie looks great! I haven’t made one from scratch, but I did make a chocolate pie from scratch a few times. Tasted wonderful, and a bit better than it looked!

  7. So here’s the thing: my sweet tooth is quite moderate, but when it gets activated, I can go overboard. Case in point, just this morning, I was blessed to have 4 large homemade cinnamon rolls baked by a friend, sitting on a plate on the kitchen counter. 2 were for my husband and 2 were for me…I ate both of my allotted rolls in one scrumptious early morning sitting while sipping a pot of my freshly brewed dark roast coffee!

  8. OMG this looks good. I really like lemon meringue pie. Kudos to you for checking that you had the ingredients first. I usually start making something and then have to run out for more eggs. It looks so good. Don’t worry, none of us can get the first piece of pie out successfully. Being able to do so is like some sort of super power. Cheers

      1. I still have a lot to discover when it comes to pies. But Blueberry sounds awesome and I´m looking forward to bake one as soon as the season for them starts (which luckily will be soon!). I watched the video but apart from showing me one awesome pie after another there was no advice given on how to cut the pie successfully 😦 Maybe they uploaded the wrong video??
        Anyway, another blogger suggested to put the pie in the fridge before cutting it, maybe that will do the trick …

  9. I’m afraid I’m a big fan of sugar also, Sarah. Sigh. We are really big on pies in Texas, I made them when I was younger. My mom always had a pie ready, now that she is 85, she no longer bakes which is a bit sad as she so enjoyed it. Your pie looks delicious, I like cakes too 😀
